Recipe Corner:
Salmon Rolls
1/2 Ib. can salmon
1 cup mashed potatoes
2 small onions, finely minced
1 cup flour
1/4 tsp pepper
Small amount grated cheese.
11/2 tsp baking powder
1 egg
1 tbsp butter
1 tsp salt
Tomato sauce
Sift together the flour, baking powder and salt. Cut in butter and
mashed potatoes, salt and pepper, and add beaten egg to form a
Paste. Roll out and spread with flaked salmon and chopped onion.
Roll up and place on greased baking dish.
Bake in hot oven for 20 - 25 minutes (until brown). To serve: cut in
slices, pour tomato sauce over slices and sprinkle with grated
cheese.

(lcelandic Quick Bread)
2 cups flour 2 tsp baking powder
1 tsp salt 2 eggs
1/2 cup sour cream
Combine dry ingredients in a bowl, add the eggs and sour
cream. Stir. Add more cream or milk if needed to make a workable
dough. Knead slightly on a board, divide into 6 even parts, roll out
to fit a medium sized pan.
Fry in Crisco or oil, add enough shortening to moisten the flat-
bread. Wipe flour off pan with oiled cloth between batches if neces-
sary. Serve hot with “running butter" or jam.

Applecake Dessert from lceland
5 medium apples (peel, cut &
cook slightly in a little water
— set aside)
1 egg white
1/2 cup slivered almonds
1/2 cup butter
1/2 cup granulated sugar
2 eggs
1 tsp baking powder
Mix until creamy the butter, sugar and egg yolks. Whip egg
whites and baking powder. Add almonds. Fold egg white mixture
'hto first mixture. Grease a 9” x 9” square baking dish and place
Vie apples in it. Over this pour the butter, sugar and egg mixture.
Bake for about 20 minutes in a 350 F oven. Cool. Cut in
squares and serve with a dollop of whipped cream.
