Happy New Year to all from the
executive members.
The Christmas party held on
December 1, 1985 was a great suc-
cess, thanks to Iola Nicklas and her
committee. A special thanks to the
boys and girls who played and sang,
and to the Icelandic classes and their
teachers plus Shirley McCreedy and
all the choir members. We'll look for
you again next Christmas. It was
great to see the people dancing
around the Christmas tree. And what
party would be complete without the
lovely food provided by the ladies.

Winnipeg spoke on Icelandic
heritage. We thank those of you who

Recipes of
Cod Heads Are Valuable
In 1983, 2.2 million tons of cod
were caught in North Atlantic
waters. From this catch, calculations
show that an additional 176,000 tons
of fish product could have been in-
expensively processed using the
Kvikk model 205 fish head splitter;
176,000 tons of high-value fish that
is today usually thrown away or sold
as a low-priced item.
This ingenious machine, developed
and manufactured in association
with Baader Service Ltd., separates
the inedible parts of a cod head from
the edible (cheeks and tongue) at a
rate of 30-40 heads per minute, equal
to the output of 20 manual workers.
The head represents 24% of a cod's
weight after gutting. One-hundred
tons of gutted cod, therefore, yields
24 tons of heads from which Kvikk's
machine extracts 13 tons of fresh or
frozen fish, nine tons of salted fish,
or five tons of minced fish. And it
automatically adjusts to sizes ranging
from 55-110 cm.

Main Course
Pan-fried cod cheeks in lemon and
basil sauce.
Ingredients:
400 grams fresh cod cheeks
dinner 7 p.m. Tickets available at the

1 green apple
1 dl white wine
'/2 dl cream
V2 lemon
Spices: basil, kondi-mix, salt, pepper,
3rd spice (monosodium glutainate).
Preparation:
Clean cod cheeks, roll them in
flour, add spice, and cook on a hot
pan for two minutes on each side.
Mince leek and peeled apple and
sauté. Add white wine and bring to
a boil. Remove from heat, add
whipped cream and spice to taste.
Appetizer
Cod tongues in cheese sauce "Au
gratin."
Ingredients:
200 grams fresh cod tongues
50 grams fresh mushrooms
50 grams camembert cheese
25 grams leek
1 dl cream
'/2 dl white wine
Spices: estragon, basil, salt and
pepper.
Preparation:
Cod tongues cleaned and washed
in cold water. Combine wliite wine,
cream, mushrooms, and leek and boil
for two minutes. Remove cod
tongues and vegetables and place in
an oven-proof dish. Thicken sauce
with thickener, add spices, and melt
camembert cheese in the sauce. Pour
over cod tongues and vegetables and
bake in a hot oven for three minutes.
