Mrs. Betty Jane Wylie (nee
Tergesen) formerly of Gimli,
Manitoba recentiy had another
cookbook published, The Betty jane
Wylie Cheese Cookbook. Mrs. Wylie
was at Gimli recently to promote her
book and said that it was available a\
the Tergeson store but also nation
wide. Here is what her publisher, Ox-
ford University Press, had to say

to cheese. For her Cheese Cookbook
she has come up with over 200
recipes and ideas ranging from basic
and traditional to innovative and
gourmet. The recipes cover every
need — feeding a family to impress-
ing guests to cooking just for your-
self. The exuberance Wylie shows in
her writing spills over into the kit-
chen, where her style is frequently
unorthodox but always practical. She
will caution you about soufflés and
go trendy with goat cheese, then turn
reassuringly traditional with a classic
macaroni. She will tempt you with
cheesecake, then offer the happy
low-cai compensation of cottage-
cheese pancakes. After a year of
cooking for this book, Wylie says she
stiii has not tired of cheese. You

Betty Jane Wylie's first piece of
professional writing was sold to
Gourmct magazine — an article
about her Icelandic grandmother's
cooking. She began creating in the
kitchen when she was raising her
four children and entertaining for her
husband, a theatre administrator,
and the result was the popular En-
core: The Leftovers Cookbook. After
that came a series of six documentary
films on nutrition, in which she was
both writer and hostess-narrator, and

.1/2 cup chopped green pepper (125
mL)
1/2 cup chopped red pepper (125

2 tbsp butter (30 mL)
1 cup sliced fr^sli mushrooms (250
mL)
2 cups (or mo^é) cooked chicken or
turkey (500imL)
8 oz vermicelli (250 g)
4 tbsp butter (60 mL)
4 tbsp flour (B0 mL)
IV2 cups milk J375 mL)
1 cup white wine (250 mL)
salt and ground black pepper to taste
1/2 tsp freshly.grated nutmeg (2 mL)
1/2 cup grated Parmesan (125 mL)
1/2 cup grated sharp Cheddar (125
mL)
Preheat the oven to 375°F (190°C).
Grease a large, shallow oven-to-table
casserole dish. Sauté the onions and
peppers in the butter until soft, then
add the mushrooms and cook tnem
briefly. Stir in the chicken orjurkey
— the more the better. Remove from
the heat. Boil the pasta until al dente
or as you like it, then drain well and
place in the dish. :
Meanwhile, you can get busy mak-
ing a cream sauce; melt the butter,
stir in the flour, and cook for a
minute. Whisk in the milk, cook a
few minutes more, until thickened,
then stir in the white wine and
seasonings. Add this sauce to the
chicken and vegetables, and pour the
whole mixture over the vermicelli in
the casserole, poking it a bit so that
everything gets ácquainted. You can
prepare this ahead and refrigerate it,
of course, but before you put it in the
oven, don't forget to combine the
cheeses and sprinkle them over the
top. Bake for 1 hour. Serves 6-8
(depending on how much chicken
you used).

Lögberg-Heimskringla will bill its subscribers in January every year
ir. the future. Thás newT way will be put into effect soon. So as an ex-
ample: if someone's subscription is due in June. 19S4, he will then be
billed for the six months left of 1984 and the whole of 1985 at the same
time. That will mean that his subscription will be due in January of
1986. Another example: someone has paid in full until March of 1985.
’He will then be billed for the remaining months of 1985 and in Janaury
1986 his payment will be due again, for the whole year.

1. On the last page of the first number of Heimskringla, September 9,
1886 its policy is stated: "The paper is first and foremost for Icelanders
in Canada. We will take a keen interest in all questions which are
of much concern to them wThether they are matters of public affairs,
employment or education.”
2. The first editor of Lögberg was Einar Hjörlefisson. Einar emigrated
from Iceland in the mid 1880s after having spent several years in
Copenhagen as a student. Einar was a good writer and a weli-knowTn
poet.
