‘fair’ - the Icelandic Festival
(íslendingadagur) in early August. The
national holiday was celebrated with a
small carnival, a parade, street dance,
fireworks and other entertainment.

versary of their right to vote and
an article about an Icelandic street
performance in downtown Reykjavík
on the 17th of June. Its organizers
had prayed it would not rain so
that the black paint on the actors
would not run and the elephant would
not collapse. Their prayers were
answered and the performance was a
success.

Exhibition of lcelandic
Contemporary Art
An exhibition of Icelandic contempo-
rary art was held at the American
Scandinavian Foundation Art Gallery in
New York during the month of June.
Works by painters Helgi Porgils
Friðjónsson, Gunnar örn, Margrét
Jónsdóttir and Kjartan Olason, and sculp-
tors Brynhildur porgeirsdóttir, Svava
Bjömsdóttir, and ívar Valgarðsson were
exhibited.
The opening reception was hosted by
Ambassador Ingvi Ingvasson and Consul
General Helgi Gíslason. Many Icelanders
from the New York area attended and
enjoyed refreshments supplied by Ice-
landic companies. The exhibitgot mixed
reviews from those present.

Salted Fish au Jardinier
serves 4
600 g dried salted fish
4 tablespoons oil
2carrots
1 paprika (green or red)
1/2 leek (white)
450 g tinned tomatoes
Soak fish in cold wa-
ter for 24 hours. Change
water twice. Pour off the
water, cut the fish into
portions and boil for 5-8
minutes. Remove from
heat but allow fish por-
tions to remain in the
boiled water for 4-5 min-
utes, then lift outfish and
carefiilly remove bones
and skin.
Clean and dice the carrots. Slice the
leek and chop the paprika. Heat the oil in
a heavy saucepan then add the vegetables.
Saute briefly then add the tomatoes and
simmer for a time on a low heat Season
with salt and pepper to taste. Cut the fish
into small pieces and add to the saucepan.
Simmer until the fish is hot throughout.
