Icelandic Pancakes,

1/4 tsp.
1/2 tsp.
1/2 cup

eggs
salt
cinnamon
sour cream
soda, disolved in
boiling water
vanilla
1-1/2 cups flour

1 tsp. baking powder
1/2 cup Crisco or Canola oil
1/3 cup white sugar
In place of milk use:
2-1/2 cups water
2/3 cup skim milk powder
Skyr from Buttermilk, subnúued by Ron Eyoitson
Take 2 litres of buttermilk,
open up wide. Place in oven with
light on for about 12 hours or
until you see whey separating
from curd.
Place colander over ice cream
pail, line with cheese cloth or tea
towel. Pour butfermilk very gen-
tly over cloth to drain for about 8
hours or until curd is fairly firm,
then place curd in bowl and beat
until smooth. Add sugar to taste.
Should be served with cream.
(No rennet required).

for 1 hour in double boiler, beat
