it’s time to
come up
with some
ideas for
some daily meal suggestions.
First I would like to tell
you about how I came to be
interested in cooking. In
1952, I joined the Seattle
Fire Department and was
assigned to station #18 in the
community of Ballard. I was
assigned to engine #18,
which shared the station
with ladder #8 and battalion
chief #4. This made a crew of
ten men on shift at a time,
and we had a dinner clutch
on the day shifts. The cook
when I came to the station,
was Dave Foster and he had
been a Navy cook during the
Second World War.
The usual procedure after
completing the station house
work in the moming, was to
gather in the beanery
(kitchen) for 10 o’clock cof-
fee, and one day Dave asked
me to give him a hand peel-
ing potatoes. I was Dave’s
helper off and on for two
years, and then one day
Dave decided to quit the
department and start his
own business. I was elected
to take his place and was the
cook for sixteen years.
The only perks that the
cook got, was that he didn’t
have any watches on the day
shift and they didn’t detail
you to other duties. Our mid-
day meals were basically
soups and bean dishes, this
was so the guys wouldn’t eat
to heavy, and not eat when
they got home, this was to
prevent unhappy wives.
We had four Icelanders in
the department, my brother -

Every carrot brings you
closer to death. Carrots
are associated with all the major
diseases of the body. Eating
them breeds communism. They
can be related to most airline
tragedies. Auto accidents are
caused by carrots. There exists a
positive relationship between
crime waves and consumption
of this vegetable. For example:
• Nearly all sick people have
eaten carrots. The effects are
obviously cumulative.
• 99.9% of all people who die
from cancer have eaten carrots.
• 96.8% of all Red sympathiz-
ers have eaten carrots.
• 99.9% of all people involved
in air and auto accidents ate
carrots within 60 days prior to
the accident.

So here’s another great
recipe. Easy, cheap, you
can freeze. There are
many different ingredients
you can use. I use garlic with
the onion soup mix. So have
use.
The following two recipes
are from my cooking days in
the fire station:

2 - Vegetable Beef Barley
Soup. - serves 8
fun, make them with raisins,
cheese, sautéed onions and on

ICELANDIC BAGELS
• Mix one pkg. onion soup mix
.with two cups of hot water.
• Make your favourite bread
dough using the onion soup mix
for liquid.
• Let rise to double & punch
down.
• Now make buns & pierce
your index finger through the
centre of each roll, give it a
twirl.
• You have a large open
mouth pot full of boiling water *
1 tbsp. sugar.
• Dip your bagels one minute
on each side. Drain
• Place your drained bagel on
a cookie sheet that is sprinkled
with salt
• Brush egg wash on each
bagel
• Bake 15-20 minutes at 400°

Vegetable Beef Barley Soup
2 Ibs. short ribs on soup bone
1 bay leaf
1 medium onion, chopped
4 stalks celery, chopped
4 carrots, chopped
1 Pkg- frozen mixed veggies
3/4 cup barley
l-15oz can chopped tomatoes
1 qt tomatoe juice salt & pepper
Put short ribs in a soup pot, cover with water, add
bay leaf and 1 tsp. salt, bring to a boil and cook at a
slow boil for 1 hour; then remove short ribs & bay leaf,
put on a plate and let cool; add onion, celery, carrots
and frozen veggies, cover with one inch of water, bring
to a boil and cook for 15 mins., then add cut up meat
off of short ribs, barley, chopped tomatoes and juice,
adjust amount of water so you have a good consistency,
re-heat adding salt and pepper to taste; cook till carrots
are tender; then mix 2 tbsp. of corn starch with cold
water and stir into soup, to make smooth mixture, add
more corn starch if necessary.
Serves 8; serve with saltine crackers or bread.
Beware of the carrot!!
Halli’s Chili w/out meat
2 Ibs. small red kidney beans
1 medium yellow onion, chopped
1 small can mushrooms, cut small
3 buttons garlic, chopped small
1 qt. tomato juice
1 28oz. can chopped tomatoes
about 4 tsp. Chili powder,
Black pepper if desired
Salt? The tomato juice is salty, check before adding
more.
Sort and wash beans, add enough water to cover, soak
overnight, in the morning, pour off water through colander
and wash with cold water, again add enough water to
cover and cook for 1 hour, check beans for tenderness, if
needed cook till done, pour off water through colander and
rinse, wash pot and return beans again to the pot and set
aside.
Chop the onion fairly fine, put in a frying pan with a cou-
ple of tbsp. of water and sauté till transparent, add mush-
rooms and garlic, warm through, add to the beans, with
chopped tomatoes and juice; stir well and return to the
burner and bring to a boil, stirring often, so beans will not
stick and burn to the bottom; when it starts to boil, turn it
to a simmer and cook for 15 minutes; add chili powder
stir well, again let simmer for about an hour, check the
seasonings hotness; at this point it should be ready to
eat.
If meat is desired, use the leanest ground round (9% or
less fat) the ratio of meat to beans is 1 Ib. meat to 1 Ib.
beans. To use sauté with onión, garlic and mushrooms,
and add as above.
This is a mild chili, I found that it’s better to let those
that like it hotter, to add tobasco sauce. The ladies and
children will eat if not too hot.
The reason for changing the water so often is to get rid
of sugars on the outside of the beans, that cause gas in
the stomach.
Some people like green peppers and other veggies in
their chili, be creative, don’t be afraid of experimenting.
