This is the second annual report on the food science
program of the Agricultural Research Institute of Iceland.
The staff of the program is headed by Dr. Jon Ottar Ragnars-
son, food chemist, who is associate professor of the Food
Science Department at the University of Iceland. Other
members of the staff are Hannes Hafsteinsson, food engineer,
Guðjon Thorkelsson, biologist, and Thuridur Thorbjarnardottir,
biologist.
The annual report for 1978 contains articles and papers
describing all work done on the program in 1978. It is di-
vided into two parts.
The first part consists of articles by staff members of
the program published in various journals. The articles on
the utilization of skyr whey, nitrate and nitrite in food
and the nutritional value of potatoes were all published in
the RALA Report, numbers 34, 35 and 39, respectively.
The paper on the meat quality of lambs in an autumn
grazing/feeding experiment was presented at the Annual
Agricultural Consultants” Meeting and published in the
bulletin of the meeting.
The articles on the mortality from coronary heart di-
sease in Iceland and the diet of Icelanders were presented
at a conference on nutrition in Rio de Janeiro in the summer
of 1978. In addition, the former paper was published in the
Icelandic Medical Journal, and the latter is a chapter in a
book by Dr. Jon Ottar Ragnarsson on nutrition and health.
The second part of this report contains material on re-
sults of research carried out on the program which have not
yet been published.
