On summer weekends, Icelanders move to their
holiday cottages in the countryside to relax in the
fragrant freshness of nature in bloom. It´s a time for
friends and families to go boating, on long prome-
nades, play ball or board games with the kids or
simply sit by the fireplace with a good book and hot
chocolate. And it´s definitely a time for sharing
good food and wine, sitting outside in the crisp end-
lessly bright evening, cosying up in warm wool-
lens. On the barbecue, fresh lobster tails sizzle in
garlic butter, and mountain lamb turns pink and ten-
der, delicately perfumed with highland herbs such
as arctic thyme, blueberry leaves and rosemary.

SIMPLE PLEASURES
1) Garlic Lobster Tails: Clean the lobster tails and cut the carti-
lage through the centre. Place in a pan with plenty of butter and
pressed garlic. For extra bite, fresh seedless chilli is optional.
Cook for 5 minutes, until lobster turns from clear to white.
2) Mountain Lamb: Make several deep cuts in a leg of
lamb and place garlic cloves inside it. Baste with olive oil
and sprinkle with fresh herbs, salt and pepper. Cook at a
steady temperature for approximately 1 hour.
