Garlic bread

“Bread with an attitude.”
That’s how some folks describe garlic
bread - a food that has carved a perma-
nent place at the American dinner table.
It is flavorful and versatile, whether served
as garlic toast at a Fourth of July barbecue
or as a complement to homemade lasagna
or spaghetti.
If you’re not up to making your own
garlic bread, there are frozen varieties
available at the commissary. Some are
shipped in from the States; others are
made right here in Iceland.
Icelandic garlic bread?
It doesn’t exactly roll off your tongue,
does it? After all, when you think of
Icelandic food, images of seafood, lamb
and dairy products are the first to come to
mind. Garlic bread might be number 125
on the list, if it registers at all. But it’s safe
to say that Icelanders are quite fond of
garlic bread. And it shows in their ready-
to-bake, frozen garlic bread brands.
Locally, there are two types of frozen
garlic bread offered by competing compa-
nies: Myllan and Samsolu Bakari.
The Myllan garlic breads are available in
two varieties - fint, or white bread, and
groft, or whole wheat bread. It’s easy to
tell them apart. The white bread comes in
a blue-striped package, while the whole
wheat version is marked with green
stripes. Both types come in white rectan-
gular bags with the Myllan windmill logo
near the top. The logo is superimposed
with the word hvitlauksbraud - Icelandic
for garlic bread.
Each loaf is individually wrapped in a
clear plastic baking bag, so don’t open this
bag until the baking time is complete.
To prepare the bread, first preheat your
oven to 200 degrees Celsius (about 400
degrees Fahrenheit). Then place the
loaves on a cookie sheet and bake them
for either 16 minutes (frozen) or 13 min-
utes (defrosted). Myllan says that defrost-
ed garlic bread will keep in the refrigera-
tor for two days.
Garlic bread made by Samsolu Bakari is
similar in appearance to Myllan’s, but it
goes by the name Snittubraud med Islensku
Hvitlaukssmjori, or canape bread with
Icelandic garlic butter. (Canape bread is
usually topped with meat, fish or cheese
and served as an appetizer.)
It’s easy to decode this company’s pack-
aging, too. The logo, a baker superim-
posed by wheat stalks, is placed on a col-
ored panel - red for white bread and
green for whole wheat.
Samsolu Bakari recommends baking the
loaves in a 190-degree Celsius (375-degree
Fahrenheit) oven 12 to 14 minutes frozen,
or 8 to 10 minutes defrosted. The compa-
ny says to remove the bread from its clear
plastic bag immediately after baking.
Also, Samsolu Bakari suggests a refrigerat-
ed storage time of no more than 12 hours
for defrosted garlic bread.
Some other quick tips for both brands
include these:
- Frozen Icelandic garlic bread is
designed for conventional ovens only.
- Refreezing thawed bread presents a
health concern and should be avoided.
