This study is carried out with the cooperation of the
Agricultural Research Institute (A.R.I.) and the Mjólkurbú
Flóamanna (M.B.F.) - a dairy in southeast Iceland. It com-
menced in the autumn of 1977.
The research group at the A.R.I. forms ideas for the
composition of the drinks and is responsible for testing
them and carrying out chemical analyses. The M.B.F., on
the other hand, is responsible for attaining the skyr whey
and concentrated whey and for -the production and packaging
of the final nroduct.
On behalf of the A.R.I., dr. Jón ðttar Ragnarsson,
associate professor, and Hannes Hafsteinsson, research
officer, have been responsible for the study, and on be-
half of the M.B.F., Rrétar Símonarson, dairy director,
flrn Vigfússon, foreman, and Gissur Jenssen.
Derek Mundell, agricultural chemist, and his assistants,
Ása Aradóttir and Pat Dixon, are responsible for the mineral
analyses and part of the protein analyses.
