This research project is done in continuation with studies
carried out in the years 1977 and 1978 in connection with the
utilization of skyr whey. The results of these earlier stud-
ies were published in Fjölrit RALA nr. 34 in November 1978.
The project is organized in the same manner as in the
earlier project with the cooperation between the Agricultural
Résearch Institute (ARI) and Mjólkurbú Flóamanna (MBF), i.e.
ARI is responsible for ideas on the composition of the drinks
and testing the product, while MBF is responsible for obtaining
the whey and processing the product.
On behalf of ARI , dr. Jón ðttar Ragnarsson, associate
professor, and Hannes Hafsteinsson, research officer, have
been responsible for the project. On behalf of MBF, Grétar
Símonarson, dairy director, örn Vigfússon, dairy technician,
and Gissur Jenssen, dairy technician, have been responsible.
