Roast lamb for a
yuletide meal
My niece Olivia Sparks and I discussed the idea of an updated
version of the traditional roast
leg of lamb dinner for the holi-
day season. She was enthusi-
astic and contributed the fol-
lowing recipes, which we hope
you will enjoy trying. Olivia
has completed her culinary
studies and is now happily
working in her chosen field.

Dundas, ON
1 lb. butternut squash,
medium dice
salt and pepper to taste
1/4 tsp cinnamon
1/8 tsp ground cardamom
2 tbsp brown sugar
2 tbsp lemon juice
2 oz. butter, melted
Baked Butternut Squash
1. Place the squash in a buttered pan. Season with salt
and pepper, cinnamon, cardamom and brown sugar.
2. Drizzle the lemon juice and butter over the top of
the squash.
3. Bake uncovered in a 350°F oven until tender
(approx. 50 minutes).
Note: You can make ahead and reheat while lamb is resting.
3 – 4 cloves garlic
(more if desired)
8 – 10 medium sized potatoes
1/2 cup sour cream
1/4 cup butter
1/3 cup parmesan cheese
salt and freshly ground
pepper to taste
Roasted Garlic Mashed Potatoes
1. Roast garlic: Peel skin from garlic cloves. Enclose in an
aluminum foil packet with a drizzle of olive oil and a
sprinkling of coarse salt and freshly ground pepper. Bake
at 400°F for 20 – 30 min. (until soft and golden).
2. Boil potatoes. Mash or whip the potatoes with the crushed
garlic and remaining ingredients.
1 1/2 lb. Brussels sprouts
2 oz. butter
4 oz. pecans, chopped
salt and pepper to taste
Brussel Sprouts in Pecan Butter
1. Trim the Brussels sprouts and mark an X in the bottom of
each with a paring knife to promote even cooking.
2. Boil the sprouts in salted water until tender (approx. 10
minutes).
3. Drain and hold the sprouts in a warm place.
4. Heat the butter in a sauté pan until it turns brown (buerre
noisette). Add the pecans and toss to brown them.
5. Add the Brussels sprouts and toss to reheat and blend
flavours. Adjust the seasonings and serve.
6 – 8 lb. lamb leg
3/4 cup olive oil
4 cloves garlic,
finely chopped
2 tsp thyme
1 tsp rosemary
1/4 cup fresh parsley,
chopped
1/4 cup Dijon mustard
1/2 lemon, juice and zest
Olivia’s Roasted Leg of Lamb
1. Mix all the ingredients together and rub it all over the leg
(bone in or out; if out, rub on the inside as well before tying
the twine). Let the leg in the rub sit for a day or at least for a
few hours.
2. Sprinkle with salt and pepper. Roast at 450°F for 15 minutes
to sear. Turn oven down to 275°F and roast until an internal
temperature of 60 – 65°C, 145°F; approximately 2 hours.
3. Serve au jus or with pan gravy.

May 1839 in Denmark.
After returning from Iceland,
where he served a mission, he
married Rannvieg Jonsdottir 11
November 1880. Rannvieg was
born 17 August 1851 at Myrum,
Vestur Skaftafell. Her parents
were Jón Benediktsson, born in
1813, and Margrét Ólafsdóttir,
born in 1816.
Helga and Thordur did not
have any children. Maren and
Thordur had six children: Mary
Harriet; Sarah; Theodore Dahl;
Albert; John O.; and Inger Grace.
Rannvieg and Thordur had three
children: Helga Margaret; Theo-
dore Gudmundur; and Dedrik
John.
Thordur homesteaded 160
acres on the east bench of Span-
ish Fork. He established an adobe
yard which furnished materials
for many homes in Spanish Fork.
Thordur was a leader among the
Icelandic pioneers in Spanish
Fork. He presided at many of their
meetings. Many of the Icelandic
emigrants that came to Spanish
Fork found shelter and food un-
der his roof.
In 1875 Thordur Didriksson
and Samuel Bjarnason were called
as missionaries for the Church of
Jesus Christ of Latter-day Saints
to serve in Iceland where they
laboured until 1877, mostly in
Reykjavík and the western and
north parts of the mainland. They
did visit the saints in the West-
mann Islands.
In 1878 – 1879, Thordur au-
thored a book that contained ex-
tensive missionary messages. The
book was written in Icelandic and
titled Aðvörunur og Sannleiks-
raust (“A Voice of Warning and
Truth”). It was published in Co-
penhagen, Denmark in 1879 and
used as a missionary tract. It was
reprinted by Byron T. Geslison for
use in missionary proselytizing. It
is still in use today in Iceland.
The original handwritten
book is in the possession of Fred
Dedrickson of Orem, UT. Fred
had Darron S. Allred translate the
book from Icelandic to English
in 2002. It contains an inspiring
missionary message.
In 1887 Thordur Didriksson
and Einar Eiriksson were called
as missionaries labouring among
the Icelandic pioneers in Span-
ish Fork. In 1888 a committee of
three, Thordur Didriksson, Einar
Eiriksson and Jon Eyvindsson,
were chosen to build a meeting
house for the Icelandic pioneers
so they could worship in the Ice-
landic language. Jon Eyvindsson
donated the property, and a one-
room meeting house was erected
on fifth east between second and
third south. Meetings were held
regularly with Thordur presiding.
A newspaper article in the
Utah Enquirer, a Provo-based
paper, on 2 November 1888 re-
ported, “On Tuesday evening
Deputy Marshal S.F. Mount ar-
rested Theodor Dedrickson at his
home in Spanish Fork City on a
complaint charging him with un-
lawful cohabitation. He appeared
before Commissioner Hills for
examination. There was sufficient
evidence to warrant the defendant
being held to answer before the
grand jury. He was bound over in
the sum of $1000.”
Thordur (name listed as
Thomas Didriksen) was arrested
and taken before Judge Judd of
Provo, 12 March 1889, for un-
lawful cohabitation and adultery
associated with plural marriage
situation. He was sentenced to 65
days in the state penitentiary. He
was discharged from the peniten-
tiary 14 June 1889.
Thordur died 9 September
1894 of diabetes. He is buried in
the Spanish Fork City Cemetery.
He was known by Thordur Ded-
rickson in Utah. He is number 69
in Icelanders of Utah.
