56 ICELAND REVIEW one with the works a cultural institution in iceland, hot dogs are often served with a range of condiments, including ketchup, sweet mustard, fried onion, raw onion and remou- lade, a mayonnaise-based sauce that contains sweet relish. ask for eina með öllu (‘one with the works’) and you’ll receive all of these. Here photographer and food styl- ist Áslaug Snorradóttir turns this icelandic favorite on its head by offering lamb hot dogs placed inside green kale instead of bread, topped with a full range of all-icelandic garnishes.
