There always seems to be so many occasions to celebrate over the sum-
mer months. In our family four
of five siblings have summer
birthdays and a favourite cake!
It is a simple sponge cake
baked in two layers which are
split, spread with a filling and
then frosted. The best part is
that it is light and lends itself to
all kinds of different fillings. Or
if you prefer and time is short it
is a great base for strawberry or
raspberry shortcake.
Confetti Torte
1 cup flour
1/2 tsp. baking powder
1/2 tsp. salt
5 eggs
1 tsp. vanilla extract
1 cup sugar
1. Preheat oven to 350° F.
2. Grease and line two 9” lay-
er pans with wax paper, then
grease wax paper lightly.
3. Combine flour, baking pow-
der and salt.
4. Beat eggs and vanilla at high
speed until foamy.
5. Gradually add sugar, beat
until thick and ivory-co-
loured. Do not underbeat.
6. Fold in dry ingredients 1/3
at a time, using wire whip or
spatula.
7. Pour into pans. Bake at 350°
F for 25 – 30 minutes or
till cake springs back when
touched in centre.
8. Cool in pans 5 minutes;
remove from pans. Cool
completely.
9. Split layers. Fill and top
with confetti cream. Frost
sides with whip cream. Re-
frigerate.
Confetti Cream
1-8 oz. pkg. cream cheese
1 cup sour cream
1 cup sugar
1 tsp. vanilla
1/4 tsp. cinnamon
1/2 cup cut marashino cherries
3/4 cup finely chopped walnuts
3/4 cup shaved milk chocolate
2 cups whipping cream
1. Combine cream cheese,
sour cream, 2/3 cup sugar,
vanilla and cinnamon. Beat
till smooth.
2. Fold in cherries, nuts and
chocolate.
3. Beat cream till thick, add 1/3
cup sugar.
4. Fold 1/2 of the whipped
cream into the sour cream
mixture.
Note: I have made this cake
and omitted the cherries, wal-
nuts and milk chocolate in the
confetti cream and then served
the cake with in season sliced
peaches.
Variations:
Raspberry Cream
1 pkg. (15 0z., 425g) frozen
sweetened raspberries
(thawed) or an equal quan-
tity of fresh berries
1 envelope unflavoured gelatin
1/4 cup sugar
1 tbsp. fresh lemon juice
2 cups whipping cream
1. Press berries and their juice
through a sieve. Add water
to make 1 1/2 cups.
2. In a saucepan mix gelatin
with sugar. Add raspberry
juice. Stir over medium heat
until gelatin is dissolved.
Add lemon juice. Chill until
slightly thickened. Beat until
smooth.
3. Whip cream adding 2 tbsp.
sugar or to taste and 1/2 tsp.
vanilla, and fold 1/2 in to the
raspberry cream.
4. Fill layers and top with
raspberry cream. Frost sides
with remaining whip cream.
Garnish with fresh raspber-
ries.
Lemon Cream
4 eggs
1 cup sugar
2 1/2 tbsp. finely grated lemon
rind
1/2 cup fresh lemon juice
1/2 cup butter, cut into pieces
1 cup whipping cream
1. Beat eggs adding sugar
gradually until light and
fluffy.
2. Add lemon rind, and juice
and butter to the egg and
sugar mixture.
3. In the top of a double boiler
cook and stir the combined
mixture until thick and
creamy (about 20 minutes).
Cool.
4. Whip cream adding 1 tbsp.
sugar or to taste and 1/2 tsp.
vanilla.
5. Fill layers and top with
lemon cream and frost sides
with whip cream. Garnish
with any fruit or berries of
your preference.
Note: This lemon filling is
also wonderful for tarts. Keep
refrigerated and fill tarts as re-
quired for serving.
