Making skyr at Palsson’s
Step 1: The milk product, similar to yoghurt,
is placed on a cloth stretched across the top of
a bucket to drain the whey at 9 a.m.
Step 2: The mixture is stirred throughout
the morning so that thickening chunks don’t
rest at the bottom and prevent the whey from
draining.
Step 3: At 2 o’clock, Inge Matthiesen makes
sure the mixture is smooth and even.
Step 4: The fi nished skyr is packaged and
ready for the customer.
In a normal week, Inge Matthiesen says Palsson’s Fine Foods makes one batch
of skyr, sometimes two. In the
weeks leading up to Christmas,
it’s not unusual for them to
make three batches a week.
Ian Palsson says he’d like
to have the product evaluated
to quantify the nutritional infor-
mation, and begin marketing it
to a wider audience.
