Golden Pan-Fried Pickerel
1 Freshwater Fish Pickerel fillet, skin on (at least 6 oz)
2 tbsp flour
1 to 2 tbsp cornmeal, bread or cracker crumbs
1/2 tbsp seasonings of choice, such as garlic, celery or lemon
salt, tarragon, thyme, turmeric, pepper, other herbs/spices
1 egg, beaten
2 tbsp canola or olive oil
Combine cornmeal/crumbs and seasonings.
Rinse pickerel fillet and pat dry. Dredge both sides in flour. Dip pickerel fillet
in beaten egg (one egg is enough for about four fillets). Shake off excess liquid
and then dip fillet lightly in seasoned cornmeal/crumb mixture until coated on
both sides.
Pan fry pickerel fillet in oil over medium high heat, skin side down, for 3
minutes. Turn and fry skin side up for 2 minutes, then turn again and fry skin
side down for 2 more minutes. Total time may vary based on size of fillet. Serve
immediately.

Icelandic Manitobans and their friends filled the rotunda of the Manitoba Legislative Building on June 17 to mark Jón Sigurðsson Day, which has been an officially recognized day in the province since the passage
of the Jon Sigurdsson Day Act five years ago. Dignitaries in attendance at
this year’s ceremony, which was emceed by Karen Botting, included Philip
S. Lee, Lieutenant Governor of Manitoba; Eygló Harðardóttir, Minister of
Social Affairs and Housing in Iceland; Ambassador Hjálmar W. Hannesson;
provincial and local officials and community leaders; and Linda Sigurdson
Collette, this year’s Fjallkona. A concert followed at the Winnipeg Art
Gallery featuring the Sauðárkrókskirkja Choir and “Icelandic vaudeville.”
