It is postulated tliat the plant madder
(Galium verum) in fodder of cows in Ice-
land is the main cause of the so called
„Gellir“=yell, i. e. formation of curds
when such milk is heated, thus upsetting
the conventional „skyr“making. In this
peculiarity of the madder we might find
the origin of the cheese and „skyr“making
in the antiquity.
